In Biofach, the Joint Nordic stand presents the best organic products from Finland, Sweden, Denmark and Norway. This is the first time the Nordic countries have a joint stand. The exhibitor stalls of the countries are beautifully lit, spacious, and elegant. Based on the Nordic stand, it can really be said that together we are stronger.
Also for the first time in BioFach we have a Nordic exhibition kitchen, where the unique essence of the Ny Nordisk Mat programme is presented.
Exhibitors and guests have taken the Nordic Organic kitchen in very well, looks like all the seats are constantly reserved. The exhibitors can offer lunch for their guests and visitors of the fair can enjoy Nordic flavors. Finnish Ny Nordisk Mat ambassador Kim Palhus has planned for each day a Finnish signature plate, which consist of the food stuffs presented in Finnish stalls.
What is New Nordic Food? As Finnish Ny Nordisk Mat ambassador Kim Palhus said today in the stand’s opening session, is it pure, it looks good, it is simple, and it has the taste of Nordic nature. And it offers new, innovative dishes; for example, today’s Finnish dish is called “Nordic Salsa”.
Nordic salsa with warm cottage cheese, capers and carrot stripes
Ingredients: for 10
1 yellow onion
1 sour apple
1 carrot
1 parsnip
¼ rutabaga
4 fresh tomatoes
1 glove garlic
½ dl cold pressed turnip rape seed oil 1 dl water or vegetable bouillon
½ tablespoon salt, grinded black pepper
White vinegar 8%
1 dl chopped parsley
½ dl grated horseradish
5 tablespoon capers
200 g cottage cheese cubes (leipäjuusto)
Preparation:
1. Peel and cut all vegetables to small cubes approx. 1x1 cm.
2. Preheat pan add oil and all vegetable cubes
3. Stir gently and add water and spices, reduce heat and simmer about 15 minutes, check taste.
4. Allow to cool, add cottage cheese cubes, mix gently.
5. Place salsa on the top of finn crisp slice. Decorate with cooked carrot stripes and capers
